Corn ’n’ Oil

A traditional Caribbean cocktail, the Corn 'n' Oil is made without corn or oil. The name, however, refers to the presence of blackstrap rum, a dark-colored rum with a somewhat oily appearance that floats on top of the other lighter-colored ingredients.

Corn ’n’ Oil Cocktail

The Corn 'n' Oil cocktail is thought to have started in Barbados and has an interesting, if somewhat enigmatic, history. Its main ingredient is falernum, a spicy, sweet syrup that perfectly embodies the island. The most popular falernum is made by John D. Taylor, and it adds rich, nutty notes that go well with the other ingredients.

This cocktail is usually made with blackstrap rum, which has a strong flavor and a deep color. Although its dark color is frequently the result of caramel coloring rather than aging, it has a strong, molasses-like flavor. An aged Barbados rum might be your choice if you want a lighter touch, letting the character of the falernum take center stage. A lot of bartenders will change the lime juice in this situation so that the rum, which is complemented by aromatic bitters for depth, takes center stage.

Ingredients
  • 2 ounces of aged Barbados rum or blackstrap rum
  • 1/2 an ounce of falernum
  • 1/2 ounce of lime juice, just squeezed
  • 3 dashes of bitter Angostura
  • A wedge of lime as a garnish
Instructions
  1. Pour ice into a rocks glass.
  2. Rum, falernum, bitters, and lime juice are all combined. The rum can be added last for a layered effect by slowly pouring it over the back of a bar spoon, allowing it to float on top.
  3. Garnish with a lime wedge.
